Veggie Tempura

We got together with some neighbors on Friday night. Using some available vegetables, this appetizer is a real crowd pleaser.



Ingredients:
  • Vegetables
  • Oil
  • Tempura Batter
  • Salt
Firm vegetables such as green beans, eggplant, carrots, and onions are best for this. My personal favorite is zucchini. Clean and cut the vegetables. Dry thoroughly.


The instructions say to coat the vegetables with the dry batter flour.


Then make a cup of wet batter and coat the veggies.


In the farmer's market were these large jalapenos, so I bought some and tried frying them as well. They were super hot, but yummy. I think 1 pepper was enough for one person.


When brown, take everything out and lay it on a paper towel to blot some of the oil.


While still hot, sprinkle some salt all over the veggies. Enjoy!
